It was so hard deciding what to try and cook for this first entry in this series! It has been a rather rainy morning so even though it's May -soup seemed appropriate. I looked through a few books and this one sounded pretty tasty and not too difficult so I gave it a try :)
I heard about this cookbook on PDN's website. Jason Fulford did the photography and it sounded rather interesting so I ordered it. Interesting it is...and a very unusual cookbook- probably the only one I've ever actually read like a book. It's the story of a tiny restaurant in NY and the man and family that owned it: Eat Me- The Food and Philosophy of Kenny Shopsin.
The soup I tried to make was the tomato soup. I started by making a marinara sauce (pg 236) and the croutons (pg 150)- THEN I made the soup:
2 cups marinara sauce
1 cup chicken stock
1/4 cup heavy cream
1 T grated Parmesan
1/2t fresh garlic
1/2t butter
salt
The instructions bascially say to put all of that in a blender and "whack it together"...check...then you just warm it up! It turned out a pretty ugly color, but I was surprised when I tasted it- sort of like...tomato soup! I'm calling this one a victory even if it is ugly :)
